Gluten-Free Banana Bread

A moist and delicious gluten-free banana bread that's perfect for breakfast or snack time.
Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1/2 cup sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups gluten-free flour blend
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line with parchment paper.
- In a large mixing bowl, mash 3 ripe bananas with a fork until smooth.
- Stir in 1/3 cup melted butter and 1/2 cup sugar until well combined.
- Beat in 1 large egg and 1 tsp vanilla extract.
- Sprinkle 1 tsp baking soda and 1/4 tsp salt over the mixture and stir in.
- Gradually add 1 1/2 cups of gluten-free flour blend, mixing gently until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Once cooled, slice and serve. Store any leftovers in an airtight container at room temperature for up to 3 days.
