A light and refreshing salad with grilled chicken and Mediterranean flavors.
Ingredients
2 boneless, skinless chicken breasts
4 cups mixed salad greens
1/2 cup cherry tomatoes, halved
1/4 cup sliced cucumber
1/4 cup crumbled feta cheese
2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
1 tsp dried oregano
Salt and pepper to taste
Instructions
In a small bowl, mix 1 tsp dried oregano, 1/4 tsp salt, and 1/4 tsp black pepper. Rub this mixture evenly over both sides of the chicken breasts.
Preheat a grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
Remove chicken from grill and let it rest for 5 minutes before slicing into thin strips.
In a large salad bowl, combine 4 cups of mixed salad greens, 1/2 cup halved cherry tomatoes, and 1/4 cup sliced cucumber.
In a small jar or bowl, whisk together 2 tbsp olive oil, 1 tbsp lemon juice, 1/4 tsp dried oregano, and a pinch of salt and pepper to make the dressing.
Add the sliced grilled chicken to the salad bowl.
Drizzle the dressing over the salad and toss gently to coat all ingredients.
Sprinkle 1/4 cup crumbled feta cheese over the top of the salad.
Serve immediately, optionally with a slice of lemon on the side for extra zest.
